Melon and Prosciutto Bruschetta with Basil Mayonnaise


¼ cantaloupe or honeydew melon, thinly sliced
1 package Columbus Salame Company Prosciutto
1 c. basil mayonnaise
1 baguette, sliced and toasted
freshly grated Parmesan cheese


For the mayonnaise:

½ c. mayonnaise
½ c. crème fraiche
 small package of fresh basil, including stems
salt and pepper to taste


Blend all ingredients in food processor or blender until smooth.

Smooth a thin layer of mayonnaise on each slice of baguette.  Layer loosely but generously, the prosciutto and melon.  Top with a sprinkle of Parmesan cheese and serve.
